As Malaysians always know, Kasuwi is composed of 2 parts, its ‘dark body’ and its ‘whitish hair’…:-)

Dark body
Cornflour 1/2 a cup
Plain flour 1 1/2 cup
Granulated sugar 1 cup (+ 1/4 a cup for a sweeter taste bud)
Dark Muscovado sugar 1/2 cup
1/2 teaspoon of ‘edible lime’= lime calcium hydroxide (branded as Raja Chuna)- as glazing agent
Cold water 4 cups

Whitish Hair
desiccated coconut
salt
water

Instructions:
Blend together all of the ingredients of ‘dark body’ and filter through a normal kitchen sifter (of 1mm pore size) into a micrwaveable container. Microwave for 15 minutes (1000w).

For the whitish hair part: Get some dessicated coconut, sprinkle with some water and salt, microwave for 1min.

Finally, throw in cut ‘cooled dark body’ into this ‘whitish hair’ to make a well-formed Kasuwi…..alhamdulillah…InsyaAllah jadi.

3 eggs (separated)
1 cup corn/sunflower oil
150g granulated sugar or 150g brown sugar (plus 2 table spoon dark Muscovado sugar)
1 1/2 cups mashed bananas
3 tablespoons cocoa powder
250g self-raising flour
1 teaspoon cream of Tartar
1ts salt
1ts vanilla essence

INstruction:
Whisk the egg whites in a clean, dry bowl until stiff. Set aside. Mix oil and granulated sugar in another bowl. Then add in egg yolks and whites, little by little. Add other ingredients and mixed well (flour is the last to put in). Bake at 180degrees for 45minutes, InsyaAllah

Actually, I modified the carrot cake recipe and came out with this one- dua rasa, satu perisa…because that fine day, I wanted to eat choclate cake as well as banana cake. And knowing that I am not that energetic to bake 2 cakes on that day, I decided to combine the two taste into one cake…so..is it more simple or more complicated? :-)

250g flour
1ts mixed spices
11/2 ts baking soda
1ts salt
100gg chopped walnut- optional

INstruction:
Whisk the egg whites in a clean, dry bowl until stiff. Set aside. Mix oil and granulated sugar. Then add in egg yolks and whites, little by little. Add other ingredients and mixed well (flour is the last to put in). Bake at 180degrees for 45minutes, InsyaAllah

The batter
150g (5oz) tepung naik sendiri
30g (1oz) serbuk koko
2 sudu teh baking powder
175g (6oz) butter-softened
175g / 6oz brown sugar (optional:plus 2 sudu besar dark Muscovado sugar)
3 large eggs
1 sudu teh vanilla esence
3 teaspoons instant coffee granules
2 tablespoons milk

For the sauce:
175g (6oz) brown sugar (optional: plus 2 sudu besar dark Muscovado sugar)
30g (1oz) cocoa powder
450ml (3/4 pint) hot water

1.5litre (2 1/2 pint) ovenproof dish, buttered

Instructions:
Put together (no need one by one) every ingredients of the batter in a bowl, and mixed well. Transfer to the ovenproof dish.
Pre-warm oven at 180degrees while preparing the sauce. Once the oven is ready, pour the sauce on top of the batter in the ovenproof dish, then bake for 45minutes, InsyaAllah.

If you have time, observe the cake regularly while it is baking, because after around 10minutes, you will see the half-baked batter will rise out of the sauce while the latter will go down the bottom. Interesting! InsyaAllah. The cake will eventually sub-floating in the sauce and you have to scoop out in order to eat it!

Make sure to allow the cake to cool down at room temperature before you start to savour the muddy cake :-)
